Gluten and Dairy free Friands

Have you ever tried tried friands? I'm talking about those sorry excuse of a muffin "friands" that they serve at McCafe! I mean real, honest-to-goodness, melt-in-your-mouth, fresh-out-of-the-oven, friands. They are gorgeous!! And when made right, they taste so good, you want to die! So here are some make-you-want-to-die friands.


Ingredients:
200g diary free spread (I use nuttelex)
250g icing sugar
50g gluten free plain flour
1 tsp xanthan gum
175g almond meal (just grind up almonds)
6 egg whites
1 tsp lemon essence
roughly 1/2 cup dairy-free chocolate chips

 Preheat oven to 200C or 180C fan forced. Line a twelve hole muffin tin with muffin liners. Melt the spread over the stove, or if you're like me, in the microwave!
 Sift the icing sugar, flour and xanthan gum in a mixing bowl. Add the almond meal and mix between your fingers.

 In another bowl, mix the egg whites, until they form a light floppy foam.
 Make a well in the center of the dry ingredients (not as extreme as mine!) and gently pour in the egg whites and the lemon essence.
 Add the melted spread, and gently stir to make a soft mix. Note: It is advised that you don't eat ALL the batter, because otherwise, your hungry family members are going to kill you. Make sense?)
 Gently fold in the choc chips. Enjoy Life brand have some really yummy ones. And as you can probably see, they are gluten, dairy, nut and soy free!
 Pop in the oven for about 15-25 minutes. Mine took about 20-25 minutes, but the original recipe says 15-20. You're welcome!
When they're done, take them out and don't bother waiting for them to cool, before you devour them!
Note: make sure you stash a couple away, before the vultures descend. You're welcome.
Now go and make some!
